3 tbsp extra virgin olive oil
1 tbsp live apple cider vinegar
Sea salt and black pepper
2-3 large handfuls rocket, watercress or baby spinach (or a mixture of leaves)
10-12 thin slices cucumber
½ avocado chopped into small chunks
1 tbsp Parmesan shavings
2 tbsp pine nuts or walnuts
- To make the dressing, mix together the olive oil and apple cider vinegar and season with sea salt and black pepper.
- Place the salad leaves in a bowl and toss them in the dressing.
- Add the cucumber and avocado to the leaves.
- Sprinkle the Parmesan shavings and pine nuts or walnuts on top and serve.
