World Vegetarian day

Are you a vegetarian? Or are you considering moving to a vegetarian diet?

Today (1st October) has been designated World Vegetarian Day and kicks off Vegetarian Awareness Month – both designed to tempt people to try vegetarianism (even for just one day).

Including more vegetables in our diet is beneficial whether we are vegetarian or not. As well as providing us with much-needed vitamins and minerals, plant-based foods include fibre that supports the gut microbiome – promoting bacterial diversity and helping to increase overall numbers of bacteria.

And plant-based foods are not just the traditional fruit and veg we think of – they also include legumes, beans, nuts, seeds and seaweed.

Try our Bean Chilli recipe for World Vegetarian day - Proven Probiotics

Bean Chilli

Serves: 4

Prep time: 30 minutes

 

2-3 tbsps olive or coconut oil

2-3 bay leaves

1 large onion, diced

3-4 garlic cloves, finely chopped

2 celery stalks, diced

1 large pepper (red, yellow or green), finely chopped

1tsp paprika

1tsp ground cumin

1x400g tin chopped tomatoes

2-3x 400g tin beans (kidney, cannellini, black, pinto or your preferred type), rinsed and drained

Chilli paste, powder or flakes, to taste (optional)

Salt and pepper, to season

2 handfuls fresh coriander, roughly chopped

Heat the oil on a medium heat in a large frying pan.

Add the onion, garlic, celery and pepper and fry for 8-10 minutes until soft. Add the spices and fry for another few minutes.

Add the tomatoes and simmer for 10 minutes, before adding the beans and mixing everything together.

Add the chilli (if using), salt and pepper and cook for a further 5-10 minutes.

Immediately before serving, add the coriander.

Serve with rice, quinoa or mashed sweet potato.
